Since the opening in 2012, Basque chef Eneko Atxa has not only been earning recognition for his food but for his eco-friendly philosophy as well. He decided to create a space where beauty wasn't the goal because the beauty comes from the surrounding environment. The modernist glass-box design harbours mostly recycled materials, and the building works with geothermal power, solar panels and recycled rainwater.
All organic trash is sent daily to a compost area in the nearby town. To further minimize the restaurant's carbon footprint, instead of farmers and producers driving to the restaurant, a van does a daily pickup for what's needed in the kitchen. The restaurant only works with local farmers and producers, Atxa says they play an important role in making his food taste good.
